The compounds common in the Western diet appear to promote Alzheimer's disease and memory problems in mice. And ' what emerges from recent research .
The scientists found that when they added some compounds - called advanced glycation end products (AGE) - to the diets of laboratory mice, the animals developed an increased amount of beta -amyloid in the brain. Beta -amyloid is the protein that forms in the brain " plaques " that are typical of Alzheimer's disease .
In addition , the mice fed with these compounds , have developed more problems of movement and memory .
"AGEs are naturally present in small amounts in the human body ," said senior researcher Dr. Helen Vlassara , of the Mount Sinai School of Medicine in New York City. " But they also interact with the substances consumed through foods , especially animal products prepared over high heat. Eating fried , grilled meats and dairy products pasteurized or sterilized , ingest these toxins in huge quantities. The problem is that accumulating toxins , over the years, it promotes chronic inflammation in the body, responsible for the cellular degeneration and disease. A persistent level of inflammation is implicated in many pathological processes , including Alzheimer 's disease.
"We have need of an extra well-controlled studies to identify a strong correlation between dietary AGE and cognitive function," said Dr. Jeremy Koppel , a geriatric psychiatrist and scientist at the Feinstein Institute for Medical Research in Manhasset , NY.
Dr. Vlassara agreed that further studies are needed in humans. But , says: " People do not have to wait for these confirmations to make any changes to your diet, especially since reducing foods rich in these compounds , and eating more plant-based foods , it provides a generic and certain benefit to the body ."
"It is not necessary to become a vegetarian ," concluded the Vlassara " But be careful what you eat and how you prepare "
